I can't remember how many times we've made these lettuce wraps this summer! We keep returning for more because of this specific chemical mix. They are a lettuce wrap version of the enduringly famous Italian Sub With Lettuce Wrap.

Since they require no cooking at all, they are both fresh and incredibly filling, making them ideal for the summer. We've even created them on the tailgate of our truck while camping on many occasions. Even without a kitchen, it's still rather attractive to prepare, even though it does take a bit more work.

Lettuce iceberg! We've tried this with romaine, butter, and other lettuces, and while iceberg lettuce may not be the healthiest, nothing compares to its crisp and italian sub with lettuce wrap.

  • Cover your work surface with a large square of parchment.
  • Line the center of the parchment paper with big pieces of lettuce.
  • Layer ingredients and spread condiments!
  • Starting with the end nearest you, wrap up the lettuce as tightly as you can, using the parchment paper as a guide.
  • Tuck the wraps' ends in toward the center after the roll has started.

Ingredients

  • One head of iceberg lettuce, with the center and outside leaves cut off
  • Four slices of organic turkey, two pieces of bacon that have been cooked and sliced in half, and one tablespoon of grainy mustard
  • One half-cut piece of cheese
  • Two tomato slices
  • One thin red onion slice
  • One 14 by 14-inch piece of parchment paper

Instructions

  • Cover your work surface with a large square of italian sub with lettuce wrap.
  • Line the center of the parchment paper with 5–8 big pieces of lettuce. Your lettuce foundation should be around 9 by 10 inches in size. Layering smaller lettuce pieces together is OK if your larger ones are shattering.
  • In the center of the lettuce wrap, spread mustard.
  • On top of the mustard, arrange the turkey, cheese, bacon, tomato, and red onion.
  • Starting with the end nearest you, wrap up the lettuce as tightly as you can, using the parchment paper as a guide.
